The China Grain Products R&D Institute Taipei (CGPRDI), Taiwan, an Associated Partner in MoniQA, organised a ring trial for rapid pH testing of rice (Dye colour-chart method for pH determination of rice grains) in collaboration with 14 laboratories in Taiwan, Spain and Italy.
The Dye Colour-chart method for rice pH determination is a rapid way to check rice pH values for brown or milled rice, for both Japonica and Indica varieties. The principle of this method is to use a pH sensitive dye indicator mixture for the water-soluble organic acids that are released from rice kernels, by bromothymol blue (BTB) and methyl red (MR) indicators. Soluble acidity reflects rice grain quality during storage and the comparison with the colour chart (visual examination) enables the detection of rice freshness.
The method offers some advantages: rapid detection of uniformity or blending status of fresh/old grains, easy use and low costs in comparison with pH meter, results’ determination in 30 minutes.
